JetBlue has given its premium Mint dining a New York makeover, bringing dishes from two popular city restaurants into the air.
The new menus feature food from Crown Shy and Birdee and began rolling out on select domestic and transatlantic Mint routes on July 31. Crown Shy is a Michelin-starred Manhattan restaurant known for modern American cooking, while Birdee is a Brooklyn bakery and all-day café specialising in comfort food and pastries.
Birdee handles breakfast, with options including a strawberries and cream croissant and a mochi waffle served with butter and maple syrup. Passengers may also find a bacon, egg and cheese roll with harissa aioli or shakshuka topped with cherry pepper relish and feta.
Crown Shy takes over lunch and dinner with dishes adapted for eating at altitude. The menu includes citrus-marinated chicken with hot sauce vinaigrette and pork katsu with a hot cherry glaze. Other options include razor clam chowder with roasted carrots and thyme, along with sweet potato lasagnette served with pecorino cream and chervil.

Dessert choices include a chocolate tart, strawberry olive oil shortcake and a warm chocolate chip cookie. The exact selection may vary by route and flight, so not every dish will appear on every journey.
AdvertisementJetBlue says it worked with the restaurants’ chefs to preserve the character of each dish while making it suitable for onboard service. The menus also include vegetarian, nut-free, dairy-free and gluten-free choices for passengers with different dietary needs.
The food is available in Mint, JetBlue’s premium cabin on selected routes. Along with the upgraded dining, Mint offers fully lie-flat seats, more private suite-style layouts on some aircraft and complimentary drinks.
More New York restaurants will join the rotation next year. Red Hook Tavern and Hometown Bar-B-Que are expected to bring their own dishes to Mint in early 2027. Until then, Crown Shy and Birdee are giving JetBlue’s in-flight dining a distinctly local flavour.
